If Gandalf had those bloody big birds that could get them all home in 10 minutes at the end, why didn't he summon them at the very beginning, fly Frodo over the mountain, drop the ring off at the start, and save everyone a lot of misery?

Because until Frodo had destroyed the Ring, Mordor was still a bit of a no-go area, and no dumb animal would go anywhere NEAR the place.
