Preferred sauce for Chips?

If we're talking chip shop chips, you can't beat the "sauce" you get in Edinburgh. When you ask for chips you will automatically be asked if you want "salt &sauce?" Any where else (including Glasgow & Dundee) it's salt and vinegar. In Embra it's sauce which is a runnier version of brown sauce (ie with a bit of vinegar in it). It is the bollox after a few beers.
