Depends what kind of Chip it is. There are many different types of Chips.

For example, McDonald's, KFC or Burger King Chips are good with Tomato Ketchup (Heinz or non-Heinz)

Other processed Chips are also good with Tomato Ketchup.

However, once you get some nice Chunky Chips, for example ones found in a proper Fish 'n' Chip shop, then the only PROPER sauce to use is lashings of salt and vinegar. To use Tomato Ketchup on this type of Chip is a travesty.

So, in conclusion, Crispy Chips demand a Salt and Vinegar dressing, Uncrispy or Processed Chips demand Tomato Ketchup.

However, Tomato Ketchup defuses through the Chips satisfactorily, thus allowing every Chip to have an equal coating of Tomato Ketchup. Salt and Vinegar tends to congregate on the surface of the Chips, so the first few Chips are very nice and coated satisfactorily in equal measures of Salt and Vinegar, but lower down there is less Salt and more Vinegar so the last few Chips are always a mushy, Vinegary slush. This is unavoidable, but worth it for the first taste of Chunky Chips in Salt and Vinegar on a cold winter's day washed down with cold Coca Cola, surely the best drink to have with Chips.

That, my friends, is a different story for a different day.

The best dressing for a chip in my opinion is a bit of salt and surround it with a nice thick slice of bread (generously buttered).

Hmmmmmmmmm

Although not technically a sauce, cheese added to chips to form 'cheesy chips' offers a delicious choice from the standard pub menu for the budget-conscious. Sprinkle liberally with black pepper.
