I was talking to a fish restaurant owner about this while camping in Bridport. He told me that Skate hadnt been caught off of the South Coast for at least 15 years, which I didnt believe as my brother in law fishes from Littlehampton with his boat. On returning home I asked said brother in law and he said " he is technically correct because what we now class as Skate is actually Wray but shops still sell it as Skate, which technically it isnt.

None the less it is my favourite fish if baked in butter and parsley with a dripping of lemon juice squirted over.

I fear you are wray off line !.. Skate still exist and are caught off the Sussex coast but due to the complexities of marketing and customer understanding almost any Skate or Ray when skinned is sold as Skate or Roker. Marketing of fish or foodstuffs is a complicated process and much thought has to go in to any change of name or emphasis. This can be seen in the recent change of Pollock to “ Colin” when filleted . It is now entirely possible that Colin’s Sandwich is feasible.
Any of the following small shark family, Greater Spotted Dogfish, Lesser spotted Dogfish, Smoothound , Spur Dog, Stellate Smoothhound and Tope when skinned will be sold as Huss or Rock Salmon as opposed to the original Dog Fish which was reckoned to put sweet little ladies off buying it due to thinking it might be a real dog.
Strangely, Sea Bass, which traditionally was caught in the sea, is quite often farmed now in tanks despite its recently added prefix.

As a footnote, the only Wray ever caught was caught by King Kong in New York City in 1933 and was returned unharmed later after some minor molestation.

Vegster much as I appreciate your comments I am told that there hasnt been a skate caught off the British coast, let alone Sussex, for at least 10 years from men whose living is fishing. I do not know you or what your occupation is but until proved different I would prefer to accept the view of a fisherman. The story about pollock was widely discussed on SCR, when it was, and if my memory serves me well the only supermarket that was going to change the description was Sainsbury's on the whims and fancies of the French to whom this is attributed.

Yep I love skate, its a great fish. I tend to go for the slightly more unhealthy option of pan frying in butter with plenty of pepper and capers.

Lastnight I did a particularly scrummy thai green prawn curry, it was the shiz I tells ya.

Over here its said to be mainly snapper or grouper. Whether it is or not I don't know. Also a fish they call snake head fish which tastes quite like mackerel.

I'd kill for haddock and chips.
