Pesto - how can I use it best-o?

Hmmm?

I want to start using pesto more in my every day life, especially as part of my lunch, and need some ideas of how I should be using it properly as I'm a bit of a pesto spaz at the moment. Can you help? Do I just chuck it in some pasta and off I go?

Please help me.

You can do that.

You can even use is like a spread on toast if you want.

spaghetti genovese- saute some new potato in butter and the oil from the pesto, add french beans, spaghetti and pesto and stir it and yummmm.

my fave is some taglietelle with loads of pesto, some tuna, some sweetcorn, pepper and loads of mature cheddar on the top

oh and can always lob a couple of sun dried tomatoes in for a bit of red

The pesto? Make sure it's got plenty of basil, garlic and olive oil in it.

4 medium skinless, boneless chicken breast halves (about 3/4 pound total)
2 tablespoons homemade or purchased pesto
2 cups finely chopped zucchini and/or yellow summer squash
2 tablespoons finely shredded Asiago or Parmesan cheese
1 tablespoon olive oil




In a large nonstick skillet cook chicken in hot oil over medium heat for 4 minutes. Turn chicken; add zucchini and/or squash. Cook for 4 to 6 minutes more or until the chicken is tender and no longer pink (170ºF.) and squash is crisp-tender, stirring squash gently once or twice. Transfer chicken and squash to 4 dinner plates. Spread pesto over chicken; sprinkle with Asiago or Parmesan cheese. Makes 4 servings. Spread on some ready made frozen pastry and roll into whirligigs (sp?).

Another good pasta dish; boil up some pasta and make a roux sauce (butter, flour, milk). Add the pesto to the roux sauce and some parma ham / peas. Makes a small jar go further.

You certainly can do a LOT of things with pesto!

This meal takes 5 minutes. Great when you can't be ARSED and tastes alright too.

Buy a Packet of the Pasta in the picture takes 3 minutes to boil.
Fry up some vine tomatoes for 2 minutes
Put Pesto in Microwave for 1min
Serve
