Its not really a chemical formula, merely the aeration of the unfrozen ice cream before packing in to tubs and flash freezing. Aerating the Ice Cream has the effect of lowering its density thus making scooping easier and making more of the same amount of product. In effect, you are buying more air.... Remember, Ice Cream is sold by Volume rather than Weight ( Mass) !
