I-Tunes stand alone does MP3s but I was told (can't verify because I haven't got one) that the I-Pod software forces you to save it in their format.

I think thats a fair summation. Once you've got one you're tied in because all of the music you've ripped and bought through I-Tunes is I-Pod specific. Good con by Apple.
