Pike & Pine on St James's street.

I always think Riddle & Finn's in the South Lanes looks rather fancy.

The Coal Shed is surprisingly classy for the area.

But yeah: Etch.

We're in the Premier League in all ways apart from proper restaurants. There's certainly some OK ones but when you consider you can walk around the West End in London and there's wall-to-wall serious good eateries. TB... you should set your mind to opening a really top notch "Michelin" restaurant in Brighton... I honestly think it will make a fortune.

I think the only place to have one was la Francais which was then No 1 Paston place and latterly Sam's. I think we have a very good food scene in Brighton but the service side is what will prevent a star from being awarded in many places.
