64 Degrees isn't posh but it's by far the best food in the City & you'll get a 6 too if you book ahead. If you want old school ties & traditional French food then take out a mortgage and go and eat at Le Gavroche in Mayfair cos you don't need a suit to eat anywhere in Brighton

You could try Plateau, its overpriced and remarkably below average but if it costs a packet it must be good, surely ?

I always think Riddle & Finn's in the South Lanes looks rather fancy.

The Coal Shed is surprisingly classy for the area.

But yeah: Etch.

I very much enjoyed the meat platter in Plateau a few years ago.
Gone downhill?
It's OK if you try the Sharing Platter.... obviously if you are on your own, don't bother if you have to share.
