Ha ha, no not me prefer medium rare. Just pink but not swimming in blood.
I just prefer to taste my sausage (no pun intended) rather than a sugary sweet sauce! However mustard and onions is a very good call!!!

On a separate note:-
What is the best sausage for a sandwich?
A) the good old fashioned banger
B) Lincolnshire
C) Cumberland
D) some other fancy pants sausage

For me it's the Lincolnshire!!

The RULES are:

Red with bacon (cheap white bread & marg.)

MUSTARD with bangers, mash and gravy

For me it's the Lincolnshire!!

It's all about PROPORTION. Sausage on its own is too dry. It needs something saucy to provide the correct texture and that something has to be spicy rather than sweet.

However, you are clearly a man of taste when it comes to steak.

Most factory mass produced sausages are rank especially the supermarket own variety so I tend to buy from butchers or if I can get there Rushfield Garden Centre. I have overcome this and am going to buy an electric mincer/sausage maker and make my own at home. As regards the sauce HP used to be my favourite but since the American owners changed the recipe to fall in with American laws it has lost its edge so now it is no sauce just R & C mustard made with powder and milk not the jars or tubes.
