I'm ill and not sure I can be bothered to go to the shop then cook.

Luckily I know of a place that will deliver a buckwheat galette (fancy pancake), stuffed with cheese, ham and veg, to my door. That's lunch sorted.

You can buy those Betty Crocker 'Shake to Make' shakers in supermarkets where you just add water.

But pancakes are very very easy to throw together if you have eggs, milk and flour and a bit of butter for the pan:

And don't panic if the first one is a bit rubbish. It takes a while for the pan temperature to settle down.

Lemon and sugar for me - although have never managed to eat more than two. Find them a bit rich for some reason.

In Munich last october I had the most fantastic pancake.

It was about the size of a proper yorkshire pudding (the ones baked in dishes and then sliced) so about the size of a frying pan but maybe 2 inches high. It was filled with almonds and blueberries and topped with cream and icecream.

The best way to sop up a few Gros Helles and also take away the taste of some repugnant schnapps from the night before

Pancake Day is my second favourite occasion on the calendar, behind only Easter. With Christmas and birthdays there is far too much expectation to see people plus expense. Halloween is shit, Valentine's Day is for me the most unromantic day of the year and Bonfire Night is for kids and weird old men in Lewes. Easter is the king of the festivals because it's four days off, loads of chocolate and comes at a time of year when the weather is pleasant without being hot (which I hate). But I don't see anything else that beats Pancake Day.
Hmmm. I'm no kid, and I'm not an old man, so I guess I must be somewhere in between the two of those at the moment and be a slightly weird man. I'll take that.

The last pancake I had was in Boston (MA not Wales), the menu said "blueberry pancakes with maple syrup" and I thought that sounded like a cracking breakfast option. I was of course expecting other items on my plate which is par for the course in good old US of A but I was horrified when it turned up with fried potatoes and tomato dipping sauce on THE SAME PLATE. I was forced to create some kind of barrier in order to avoid any kind of sweet and savoury mixing DISASTER and salvage the situation.

Tonight I shall be rectifying this ERROR by applying lemon and sugar to a couple of pancakes and syrup to a couple more. The main course will proceed this and be a completely separate affair on it's own plate.

Bug bear alert! I can't stand it being called pancake day, it's Shrove Tuesday! Apologies, got that off my chest.

I like pancakes with a little batter as possible so that they are very thin and lacy, with sugar & lemon juice although the warm black cherries with Haagen Dazs vanilla ice cream is tempting.
