I'd say Vicente.
That coup gave us credibility.
No Vicente - no Bruno (crucially - at the time I remember apparently he was brought in as he was Vicente's best mate) , David, Orlandi, Ulloa, Bridge...
And for that very reason he must be the most important player in the club's history.
Without that goal, chances are we wouldn't even have a club - let alone one holding its own in the PL.
Honourable mentions for Beaney and the financial lifeline he gave us when he was sold and BZ's goals at Withdean that sparked our success and our climb back up the ladder.

Wardy - For three seasons - when the PL didn't dominate every narrative - he was big back-page news

Bobby - Got us noticed again during the struggle/Withdean years
Bruno - Just wished we'd had him in his pomp
Mike Bamber (had a dream - got us to Div 1 but didn't get Waterhall)
Tony Bloom - has literally dragged us from the Theatre of Trees to the Amex and Lancing and PL and spent £350m in the process (more than the Saudis are paying for Newcastle United)

I would argue that Reinelt scored the most important goal but he wasn't necessarily the most important player. If Maskell hadn't hit the shot in the 1st place Reinelt wouldn't have been there to put it in.
Personal view is Glenn Murray. He got us promoted twice and I very much doubt we'd have received the Premiership riches without him.

Surely Howard Wilkinson? Albion player in the 60s and early 70s, went on to manage Leeds and mastermind the Beeney acquisition. I would love to know whether his Albion affiliations swayed him any way....
