What about the 3rd conclusion which is blatantly obvious?

The photo data depends on the camera being set up with the correct date and time. It is not beyond the bounds of possibility that the camera date was 2 days out.
But no that is too easy. As usual a conspiracy theory relies on ignoring the blatantly obvious.

Actually it's even simpler than that. The data within any file is reliant on how that data is persisted throughout the transfer/sharing/storage methods.

The date could easily have been changed (by the "computer", not by a human) as part of a copy/paste action, or how it was prepared prior to publishing e.g within image editing software.
