Place salmon in a shallow pan. On a high heat, melt some butter and brown the outside of the fish. Then turn the heat right down and add a pint of milk, some salt, pepper, lemon juice, bay leaf and chop and entire garlic head in half across the middle.

Put the lid on, and poach on a low-medium heat for 10-15 minutes.

Form a paste type substance with a combination of garlic, mint, coriander, salt, pepper and chillies. Then add some ginger, honey, lime juice and fish sauce.

Smother this on the salmon fillets and let it marinate for half an hour.

Then steam the salmon for a wee while and serve on noodles and Pak Choi with some raw peppers, grated ginger and soy sauce.
 




Brush the salmon filets with olive olive, dust lightly with fresh ground white pepper( a little goes along way) and Welsh smoked sea salt. Grill on the Q under medium high heat.

In a bowl:

Half a fin dice red onion
Two/Three diced Roma tomoto,deseeded. ( Just cut them in half, squeeze and shake the seeds out)
Couple tabs of extra virgin olive oil
Tab of Dijon mustard
Tab of minced capers
Dash of lemon juice
S&P to taste

When the salmon has grilled slaver on the relish.
