I was recently head hunted for a new food hall that’s set to open in Brighton this year. I went along to meet them and discuss their proposal but immediately clocked it for the kind of concept this author derides.

Spot on. There are a few 'food carts' in and around Canary Wharf........Indian, Vietnamese, Burritos etc. Prices are no different than any of the places in the shopping malls.

Same with Borough Market. A great place to eat. There is some value as well.

I'm sure he had his reasons but Shelter Hall sounds better than nomadically wandering around Brightin in a shed getting moved along every few months.

Accepting that it is easy to make things SOUND great in the marketing blurb, the plans for Shelter Hall do SOUND GREAT.

I actually really enjoyed Boxpark for the Cup Semi. Although I was aware of such places, I'd not been to a similar setup before.

Allowing a group to each get the food of their choosing, and then eat together works really well, particularly if the food vendors are specialists in their own particular niche.

Still think the Open Market should have been the new Borough Market. Pity it was so mismanaged by the council and the current management.

The Evening Star has been closed for the last few Palace home games - I suspect it will be again. So Trolls probably will be too.

I have made provisional arrangements with The Frau. Has she not told you?

When I lived in Taiwan I played for an ex-pat football team and our manager was Glasweigan. His contract was coming to an end on the railways but he was married to a local girl and didn't want to leave. He therefore came up with a scheme to open a genuine Scottish chippy in the middle of Taipei.

He imported a fryer at great expense and included things like chippy sauce and deep fried mars bars on the menu.

Needless to say it was less than a resounding success and folded after about a year. In that time, however, in the chippy's back bar I watched our game against Palace at Withdean (the 3-2 loss) with a Palace fan who also played for our team and was present when my fellow centre back demolished an entire crate of Guinness on a six nations game day.

Smiths in Singapore is similar, closed down boat quay but that was insane rents I think, other one is still open. More brits and aussies as a captive market though, but best fish and chips in Asia no doubt.

Kouzina the Greek place is also brilliant, it’s such a pity there are not more, it really could be the best independent foodie space in Brighton.

Agree. It’s a SMASHING place to eat. :O

I’m sure they are amazing and I would love to try one but to describe himself as wanting to offer affordable prices to working class people is a bit off right?

Greggs on the other hand is popular because they do offer apparent popular food at affordable prices?

Little of their range is fresh though. Bakery (typically frozen) doesn’t suffer from the same route to market difficulties and therefore costs.

Almost everything you eat that’s ‘fresh’ (chilled) or ambient in Costa for example was frozen just a few hours before. It’s all stored as such and defrosted on the overnight lorries that deliver to store from 3PL centres at Old Trafford, Wellingborough and few others I can’t remember just now.
