What is the best way to get mega crispie roast pots and also how can I make my missus like sprouts?? Ideas welcome

Boil the spuds first til the edges go all fluffy. I think. Or you can just put then in a saucepan with the lid on and shake them badgers up as this also fluffs up the outside making them crispy when cooked.

Goose fat for the roast potatoes. Make sure your potatoes are good ones to start with, when you drain them after parboiling do it roughly so the skin is not all smooth but is lumpy and bumpy. Get the goose fat super hot. Only turn the potatoes once.

If you were my husband trying to get me to eat food I don't like I'd knee you in the bollocks and fed your dinner to the dog. ;)

It's WAY too late now to do sprouts for Christmas Day! We've had ours boiling away since Bonfire Night.

We found a recipe for mashed sprouts with garlic and mustard (I think ) I'll go and have a look see if I can find it - its very delicious!! Bound to tempt even the hardest non sprout eater!!

Agreed! The best I've found lately is the Organic Maris Pipers at M&S.... We've had them the last two weeks as the organic ones in our veg box were sadly dreadful....

Yup, Maris Pipers are one of the best for Roasts, definitely need a floury potato, not a waxy one.

Put lots and lots of oil in a roasting tin, and put in the oven at about 190degrees C.

While the oil is heating up, parboil the potatoes for about 10 minutes, until theyre soft on the outside, yet still a bit solid in the middle

Once done, put them in a rough colinder and shake pretty aggressively, until they become all fluffy. Add flour to the potatoes (about 2 big pinches) and mix them until all the potatoes are covered

Put the potatoes in the roasting tin, which should be really hot, and should spit at you when you put the potatoes in, baste the potatoes in the oil until theyre soggy. Bung it in the oven

After half an hour, roll the potatoes around, and bung in the oven again.

After another half an hour, they will be all ready and crispy!!!

Stir fry in very hot walnut oil (or mild chilli oil if you prefer)
Sprinkle librally with sesame seeds
Serve
