I am not a qualified chef but a very competant cook and wife is better. Both of us cook the meat , make the pastry then add the cooked meat to the pastry and cook the pie complete and then eat within a few minutes. Piglets Pies cant do that.

Of course they can't then you get a re-heated pie ffs.

So part cooking is a no no and so is re-heated, so in your view how would the perfect pie arrive in your hands at the Amex???

Because you say they are finished cooking not reheated at The Amex I would think that they either cook the filling. fill the pastry and then cook for a little longer Then they are cooled and frozen/ Chilled very quickly. They could of course blind bake the pastry, add the filling then cool and freeze. This will be done on a Friday at the latest due to the numbers being made and probably earlier in the week so they cannot use the system used by a home cook that is going to cook the pie and serve immediately. I must admit that I have never considered how a commercial pie maker actually makes them as it was only you saying they are not reheated that intrigued me.

I often make 2 or 3 and freeze them as soon as made but usually the filling is precooked, in most cases the filling isnt completely cooked and left to get cold before filling the pastry. TLO said they are part cooked and not reheated so at some point prior to being taken to The Amex they are cooked partially.

They cook it for about half the time it needs to be cooked, allow it to cool, then chill it. Then they package it up, and deliver it to the venue. The cooking is finished in the individual ovens within each catering site.

They could of course blind bake the pastry, add the filling then cool and freeze.

And how would the lid be added without it coming off?

For a Saturday game, the pies are delivered on the Friday to the Amex. Sodexho have a well-honed system as to how many pies get delivered to which stand. We are talking about thousands of pies here. We are also talking about the thousands they make for other football clubs, rugby clubs, race meetings, functions, festival etc.

I'm not giving away any of Piglet's secrets here - Jo has said as much on the show.

Do you not allow them to cool down first?
