    You're right, but you'd be amazed at what has gluten in it and what doesn't when it comes to anything that isn't straightforward - eg same flavour of ice cream, different manufacturers - one is GF, one isn't. Sauces are likely to not be GF, but not necessarily - all depends on the type of flour...

    Usually 0-2, but occasionally much more - eg last year, I had to take about 10 days off for hospital treatment. Presumably there are stats around whether people are taking 7 or 8 x 1 day's sickness, or whether it's big blocks of time very occasionally when you have something serious.
