A big debate is now raging in my office about how to make coffee in a cafetiere.

I add hot water to the coffee and then give it a damn good stir before letting it stand and then plunging. Cue horror from several people here who say you should never stir it - just add the water and let it stand.

This has got to be wrong hasn't it? These people are barbarians.

(And yes, I do have a dull job)

You have to stir it. But you'll get far better coffee from a proper filter.

Stirring is a MUST but more important is not to use boiling water! Let the kettle stand for a few minutes before pouring.

Quite right. I find putting boiling water in can often make the coffee far too bitter. Slightly hotter than dinkable is the optimum and then it cools sufficiently to drink almost immediatly.

Amongst my many useless talents, I am a Gaggia-trained barista. One golden rule, as others have said, is never to add boiling water to coffee.

Of course you always need to stir the cafetiere after filling. That gives you the best chance of extracting maximum flavour from the beans. Although cafetieres are not at all bad, you will get far better-flavoured results from a decent espresso machine. As recommended by Tedebear....

Most packet-branded coffees are a con, and ridiculously overpriced. Best to buy your beans freshly roasted, from a specialist store, or Whittards. Grind them yourself using a burr grinder - not the whirling blade type. Whatever ground coffee you don't get to use within 4 hours of grinding, throw away.

If you like your coffee at less than espresso strength, add it to water pre-heated to 92 C - to make it an Americano.

There is more. But it's very boring...

spot on - better and cheaper by far than the machines.

Paying £300+ plus for one of those machines is just pretentious. More interested in what they think looks good in the kitchen than the actual coffee.
