You can use jhymn to scrub the AAC files from the iTunes store, then convert them to mp3 files if and only if you don't use iTunes higher than 5 to make the purchases.
Of course, there are a bajillion mp3 players out there, with real price competition.
Running 6 or 7 makes you a captive of the iPod, or a few compatables.
