Ten Years After - Alvin Lee's work on 'Goin' Home' from Woodstock is unbelievable. He also does some amazing stuff on their more bluesy stuff - 'Bluest Blues' and 'Slow Blues in C' do it for me.

Gary Moore's version of Stormy Monday is also pretty amazing.

For the heavier stuff, I like Richie Blackmore's effort on Highway Star from 'Made in Japan'

Most of Pink Floyd's stuff has good guitar solos but i'd pick comfortably numb (live !) or time.

No one's mentioned Dire straits either. Their early stuff is superb.

Plenty to chose from in Thin Lizzy (were superb live!), Gary Moore, Floyd & GnR. I was studying the family tree of Deep Purple earleir today and the list of guitarists included down the years was pretty awesome.
