Rock Salmon is Dogfish.
Always has been, in fact Spiney Dogfish has been sold as Rock, but it's endangered.
Other small sharks are also sold as Rock like rough hound.
Huss is Bull Huss, a much larger Dogfish.

There is no fish defined as "rock salmon" and it can mean pretty well anything the fish shop wants it to mean. Traditionally, it refers usually to catfish or dogfish, which is also called "huss",.in some areas.

This is from Yoohoo answers.

I can only say that I worked for John Oxley a group of 30 fish shops situated in the Home Counties and London but
locally had 1 in Lancing, 1 in Littlehampton., I in Goring Rd Worthing and 1 in Broadwater and when ever asked for Rock Salmon the customer was given Coley usually as I said for their pets. Whether or not that was correct I dont know as I only did what I was told and had no knowledge of fish prior to working there.
