This means they have each paid £9 which = 27 and the waiter has 2 pound coins left which equals £29. What has happened to the missing £1 coin as 3 9's equal 27.

if he has given them £1 each back, then they have paid £27 and are still entitled to the other £2 that the waiter has in his hand. therefore there is no missing coin, and no riddle!!
