Ingredients:
- 8 thrushes or black birds
- fresh myrtle
- plenty of salt
Pluck the thrushes without removing the entrails. Put the birds into a saucepan with water and myrtle. When done, drain and salt the birds abundantly. Tie the birds together in bunches and wrap their heads in a sprig of myrtle. The Taccula is made up of 8 birds. Otherwise, the birds can be put among the sprigs of myrtle rather than tying them. Leave them to stand a few hours before eating. Do not eat the beaks and stomach. Thrushes eat myrtle and they used to be cooked when the myrtle bloomed.
