Very much into Scotch Eggs and a local butcher does his 'homemade' meat such as chilli,curry,black pepper you know the rest. Also started pickilng my own onions,cabbage,beetroot and to be honest not that hard. Beats anything you buy in the shop everytime. :clap: Also love stuffed peppers and mince. :bigwave::p

I'm training to be a chef so i love experimenting with different foods & recipes.
The dishes i do most i'd say are chicken wrapped in parma ham stuffed with cheese & spinach, Home made chicken kievs. I also do a mean chilli & love doing rubs & marinades for bbq.

Its already affecting my football attendance & seeing the missus. But i'm glad i'm doing it, I've always loved to cook & this will be a career. Everything else i've ever done has been a job & a way of making money.

My chilli is pretty much the standard recipe brazing steak though never mince!! And i like to use sun dried tomatoes instead of standard toms.
I've always been tempted to add a bit of chocolate to it. In one of the posh chocolate shops in Brighton they do a chocolate marinade for bbq i'd love to try.

Fair play to ya fella. Did it for several years, it's a good trade to have you wanna travel. I had to put the knives down a year ago cos I wasn't seeing the other half and working friday and saturday nights as well as all day sunday wasn't doing much for me. It's addictive though isn't, when you create something new for the first time and it gets positive feedback, gets you really buzzing. What type of restaurant are you in,what section you working?

Macaroni cheese or chicken, cheese, bacon and leek bake.

Choc chip and pecan cookies come out quite well too.

We're on our way down!!!!!!

Not really a delicacy, but I seem to be the only person in our house that can fry eggs so the yoke stays runny :shrug:
 






Right now I'm into baking home-made bread.
I'm open to recipe ideas if anyone has any - but my first attempt using linseed, sunflower seeds, soured milk ('a-fil' as they call it here) and a teaspoon of honey in the flour worked a treat.
My next loaf I might include some cranberries or lingonberries, or shredded carrot.

Otherwise, I like to play around with recipes. Soup powders are easy to sprinkle in with a pasta, and I like adding peas as the veg - as well as capers with a salmon pasta. Creamy sauces are simple without being too high-fat - just a tablespoon of sour-cream or creme-fraiche with milk does little harm. Also occasionally use rice noodles instead of pasta, as they are lower in carbs. No salt added, and rarely any butter either.

I worked at the Priory restaurant in Haywards Heath a few years ago and yes, chefs social lives do suffer.

I did cleaning/hoovering in the morning, kitchen portering at lunchtimes and evenings with a break between 4pm and 6pm. I wouldn't finish until midnight if I was lucky! There were some great people there but that was a tough job.

Joe always cooks at home (tonight is a very delicious smelling beef bourguignon), so my forte has become attempting to produce fantastic meals when we are away in the motorhome......Think three ring hob, and motorhm oven and grill....Its been a great challenge so far which includes a good deal of chicken dishes and pasta, but going to get more adventurous soon...
