What is your favourite type of ONION?

Shallots. A bit of a pain to peel, but slightly sweeter and milder than normal onions. Great roasted

Normal shallots yes but try 'Echalion Shallots which are the elongated ones, they peel easily and are a joy to use not to mention the flavour.
