It might sound boring but Cucumber is basically the closest you can get to EATING WATER so I always feel healthomatic when snozzing those snozzcumbers down.

This is a toughie. All vegetables are amazing when they are cooked properly, and even the most boring can be made into an amazing dish with a bit of cheating (ie Cauliflower in cheese sauce).

Love asparagus, roasted butternut squash, spinach, courgette (fried with garlic, chilli and lemon juice, mmm). Sure there's many more.

A vegetable I want to eat more of is celeriac - I bloody love celeriac soup!

Maybe you could group it into vegetable groups? eg. Root vegetables, leaf vegetables, vegetables where you eat the whole lot etc.
