On the subject of uncooked meat in Paris ... I once stumbled across a very small family cafe in what was once the Paris Jewish Quarter, where the old woman who ran it suggested that we try her speciality steak tartare, with the "special sauce". It was certainly worth trying, even though the "special sauce" turned out to be a dollop of Heinz Tomato Ketchup, which she poured with a flourish over the top of the raw meat.Having to go through three chicken breasts to find one that was actually fully cooked in a central Paris branch put me off Flunch forever.
