I'd like to see him run at players in the box more. He's a tricksy player, so is likely to win penalties - but it seems to me as though when he gets the ball near the box, he often runs sideways or backwards to try and create space.

Agreed, albeit what you describe is exactly what he did to create the setup for Mooy's goal against Bournemouth.
