There will be a group of us flying into Milan mid morning on Wednesday, then aiming to catch a train to Rome.
Is it worth booking Italian trains in advance to guarentee a better fare?

Doing exactly the same. You can get a decent price on the trainline dot com from Centrale to Roma Termini, currently some trains leaving on the hour in the afternoon that are around 22 euro per person. Coming back on Friday is about double that. If you're going to Malpensa there's an airport express direct to Centrale that takes 50 mins and apparently costs around 15 euro.

You wouldnt happen to be on the easyjet LGW flight at 07:05?

On the 08.55. We'll probably get the 16:00 from Milan but only because @Carrot Cruncher is getting that but arriving on a different plane. I reckon the 15:00 would be easily doable for me. I guess the other thing to factor in is how quick the post Brexit passport control is. Amsterdam was sloooow by all accounts at Schiphol.
