A week is definitely too long , as someone earlier said 2-3 days no more.
We are doing 10 days in total split between Tokyo, Osaka then Hong Kong.

Tokyo is amazing and a week is not long enough to see everything, get a JR train pass, they seem expensive but so worth it in the long run and includes the bullet train to Kyoto, we found we could get everywhere on the JR lines around Tokyo and did not need to use the tube/underground.
