OK I hope you really do want this recipe, I have gone out of my way to get it :

Ingredients: 1 onion (dice it), 1 whole head of celery and leaves (keep some of the leaves back), small tub of creme fraiche/double cream, vegetable or chicken stock

Wash celery thoroughly and chop
Heat some oil with a knob of butter
Cook onion until golden brown in a large pan
add celery and then stock to cover plus an inch
cook gently/ When celery is soft, liquidise ( make sure well liquidised or the end result will be grainy)
Reheat add the creme fraiche or cream

Season, serve with sprinkled chopped leaves
