I'm team chef on this one. Why do people think it's ok to force a chef to ignore all their experience and ruin the ingredients?

I'd like my dinner put in the liquidizer please, I'm customer and I'm right!!

To give you a chefs point of view, it could be that the steak was a Bavette or Onglet that will become tough if cooked more than Medium Rare....
On the cooking well done issue, no problem doing this, happy to give the guest what they want, the only thing that bugs me with well done steak is it takes so long to cook nicely that it can slow the whole table and bugger up a busy service

This. Order comes on, several dishes, some nob has ordered the rolled fillet steak well done, that'll take 40 minutes then :nono:

I like the Hi-Fi shop Richer Sounds two rules of Customer Service.
Rule 1 - The Customer is always right.
Rule 2 - if the Customer is wrong, rule 1 applies.

On the steak front, I would be medium to medium rare, but if others want it burnt to a cinder, that's up to them. Any idea that it enhances the taste, however, is complete and utter rubbish in my view.

Was the steak a special, was it advertised as 'served medium' ?

No idea, we had duck and lamb. These were both good though. The steak was just advertised as steak. It's daily changing menu so everything is "special", and the discussion started when the waiter asked how the gent would like it cooked. When the punter said wel done the waiter just stared at him for what seemed an eternity. He seemed to enjoy it though

I like my steak rare but i think next time i am in a posh restaurant i will ask for it well done, go through the motions of upsetting the chef and waiting staff. The send it back for being overdone.

I've never understood the reticence of some chefs and waiters to actually agree to provide the food how you've ordered it. If you don't want to have to put yourself through cooking a steak well done then don't work in a restaurant.

I ordered a well done steak in a posh old restaurant and the waiter said do you want ketchup with that.... So I politely said no and asked to see the manager so I could tell him why we leaving.

If the chef is so pretentious so as not to cook to my requirements (normally medium to well done) then I would be equally pretentious in not paying for it to the level he requests. And, obviously, zero tip.

It depends where you are, if you're in a beefeater or harvester, knock yourself out tbh If I was in either of those I would probably lean towards well done. But in a real restaurant that as someone mentioned above has a reputation to uphold these chefs are proud of their produce and its flavour and when you cook a steak well done it just eradicates all flavour from it.

Rubbish if you pay £7.95 for a steak in a harvester or £35 in a posh restaurant you should be able to have it cooked how you like. Its your money its your choice. These restaurants need to remember they are a service industry.

Obviously both sides have an argument here, and I sympathise with the chef if they are having to 'ruin' food in their opinion. But surely the person that will be putting the food in their mouth is the one who gets to make the call here. If they want their food cooked in some specific way (within reason!) then the restaurant should oblige, or there is a good chance they won't see that customer again.

The point about reputation makes little sense, if I was sitting next to the chap eating my duck and lamb, I wouldn't think less of the chef because some HEATHEN has ordered a well done steak.

I'm allergic to kiwi so if I fancied the dessert which had kiwi, I would ask to have that excluded. If the chef felt that would ruin the integrity of the dish and ignored my request, because they know better, then I would die (assuming I didn't notice the green devil fruit). I also would never go back to that restaurant.

Last year we went to a restaurant with friends. My other half has for his steak to be served blue. It came out well done. He sent it back and refused a second offering, going without. He knows what happens sometimes when chefs send food out a second time. It was knocked off the bill.

My contribution to this thread - eating meat, however it's cooked - is ethically wrong and should not happen. Also, if we all became vegetarian we'd be able to solve world hunger and massively reduce carbon emissions .

To be fair, we could solve world hunger regardless of eating meat.

Ever thought about going vegan? My other half is and she's slowly and subtly trying to convert me. Currently I'm pesca-pescatarian
