Sounds like you'd prefer Hydra (or Idra) which is just off over an hour from Athens - it's where the the Athenians chill out..
If you can stay at the Bratsera Hotel, even better.

I went last year end of july. Santorini is great for landscapes, especially coming in on the ferry.
theres a volcanic island about 2 miles off the coast, its worth a visit and a climb to the top.
theres also a place with natural springs there, where people cover themsewlves in mub as its supposed to be good for the skin??
Naxos is pretty good too, but very touristy
