Blimey I going back for a third time next week and I don’t remember it being that expensive before. Must be all the good reviews they are getting that’s put up the prices,

Raclette, tomme de savoie, Beaufort, comte, tartiflette, diots, genepi. Can’t wait.

Utter tripe!
For some reason the French grade these from A to AAAAA. I have tried some in Paris I liked, which had a string of As, but I don't recall which region they came from. If they are really not your thing, there is always the old goalkeeper chant!

And Tartiflette is magic in a bowl. Quite amazing how 5 relatively humble ingredients can be transformed into something so good. The total far exceeds the sum of the parts.

I haven't yet but well may do. Although it does contain recipes from around the world, it also tells the story of the rise and fall of tripe in England. Good read.

Tripe was hugely popular in England back in the day. I read recently there were over 200 tripe shops in Manchester alone. Now there’s zero.

Just back from Palmito, first visit, fan-bloody-tastic. Can’t recommend highly enough for anyone who hasn’t been. Definitely one of the best restaurants I’ve ever been to. Can’t wait to go back!
