You can record the text by just changing the settings on the MSN options tab, not sure about recording video though

Purely for parental control purposes I can assure you !!!!

I can log the text as suggested above but you dont know what they are showing, nearly all the lads they talk to ask them to get em out after a couple of minutes of polite chat. The two who use it are 15 and 13.
