Probably because they play in front of 81,000 fans at home, and their record of league finishes starting from last season going back is:

In that period, they’ve won the German cup 3 times, the Supercup 3 times, and just last season were Champions League finalists.
Sahin’s record is P: 25, W: 12, D: 4, L: 9 and they are on course so far for their worst finish in 15 years, and second worst in 25 years. And they already crashed out of the cup in the second round, so Europe looking very unlikely for next season.
Hürzeler, on the other hand, is in a higher league position so far than last season’s finish, with a similar (but marginally worse) PPG record than Sahin, but having lost fewer games. The difference being that Brighton have had two top half finishes in the Premier League - ever. We’ve been in Europe once, and have never won any competition of note.
The expectations are completely different.
Add on top of that, the PL is the wealthiest, toughest and most evenly competitive league in world football, and the gulf in finances between the teams is far slimmer than the Bundesliga.
Sahin is underachieving, Hürzeler isn’t.

Oh, and a reminder that we drew at home against both Sheffield Utd and Burnley last season - this was before De Zerbi mentally checked out - so the Southampton draw is hardly grounds for this magnitude of headloss.
