Have just finished my traditional Winter batch of Seville orange marmalade. The jars are now stashed away to mature. However, I have a few of the bitter Seville oranges left. I'm thinking that I could make something like a variation on a lime pickle. Has anyone ever made a Seville orange pickle or something spicy with them?

Interesting aside: Marmalade as we recognise it was apparently invented in Scotland (previously it had been boiled down so far that it could be sliced). It took off in the UK because it was a way for the jam making factories to stay busy when the British soft fruits were out of season.

I'm not allowed to make any as Wifey has 'sticky' issues, when I'm left to my own devices, in the kitchen.

mrs starry made oodles of marmalade a few weeks ago and with the left over seville oranges she made a chutney with onion, apple, orange and i forget what else. it sounds foul but the bits we've tasted were quite nice.

we make it for the shop,and always get a few extra boxes in and freeze in black bags,so we can make all year round.they freeze very well.

Or alternatively, a canny tightfisted way of making more money from the stuff that should have been thrown away ? ( ref. Chicken Wings + Potato Skins)....It is also rumoured that Copper Wire was invented by two Scotsmen fighting over a penny

Had a marmalade sandwich earlier this evening from a 2006 batch made (and given free of charge) by my elderly neighbour. Seville orange, tastes lovely and when eaten in a sandwich rather than on toast, reminds me of a certain bear from Peru.

Hmmmm...
