Have just finished my traditional Winter batch of Seville orange marmalade. The jars are now stashed away to mature. However, I have a few of the bitter Seville oranges left. I'm thinking that I could make something like a variation on a lime pickle. Has anyone ever made a Seville orange pickle or something spicy with them?
Interesting aside: Marmalade as we recognise it was apparently invented in Scotland (previously it had been boiled down so far that it could be sliced). It took off in the UK because it was a way for the jam making factories to stay busy when the British soft fruits were out of season.
