2 so far. But the best combo is hot pie and cold cream.

You're damn right it is!

It's got to be thick or whipped cream though, none of the single cream nonsense.

Correct. Thick and whipped always. Christmas is great isnt it?

My pastry ingredients...

Two parts flour to one part margarine (e.g. Stork).
Peel of one grated orange
Two tablespoons of brandy (cheap stuff will do)

Mix the flour and cubed marg together to make a breadcumb-like texture. Toss in the grated orange peel. Measure the brandy (it's used instead of water), add to the mixture and gently knead to a pastry ball. Wrap in clingfilm and place in the fridge for half an hour.

Get a jar of mincemeat, and pour another couple of tablespoons of brandy in.

Roll out the pastry, cut into shape and place the mincemeat in. Put the pastry lid on the top, sprinkle with icing sugar and place in the oven at 180ºC for 10-15 minutes.

Job done.

Excellent for all those people who lack the tools or physical ability to cut a Stollen in to slices or cubes... an obvious " Must Have"
