Ahh, I did not say they were not any good, I have no idea of their quality, i just found it amusing that he endorses a set of 5 when his own cookery school says that a chef with more than 3 is clueless.
For what it is worth I dont mind Jamie (fat tongue an 'all) he is alright, no Raymond Blanc, but a very good chef.

I don't get the Jamie anger myself, normal fella who is passionate about eating right and always seems a decent chap. It's a very british reaction, anyone who won't put up with crap food is in some way pretentious or has affectations.

Yes his style may grate, and some of the American stuff didn't sit well and played to a british audience with anti American snobbery ( yanks eat so much better than us, fresher and healthier despite our snobbery, as a rule) but the fella has his heart in the right place.

Yep. His restaurants that take unemployed/homeless people and train them up says it all really.
Very long waiting list for the one in Cornwall which apparently is very good and somewhere i would like to visit.

Nah he is a neighbour of mine, has a place in the same street as my flat in Glasgow. very decent chap. On nodding terms.

But yes, it cracks me up his heightening of cooking dinner into the ultimate macho job. Don't be silly you have just made tea not stormed the tora bora caves.

I use Sabatier knives. they are well balanced and keep sharp. As someone else mentioned the steamer trading type shops let you have a feel for the knife. They are also a good price for anyone

Sabatier are excellent. Chefs knifes years ago, they didn't use much else.

My favourite knife is a Sabatier that is over 40 years old - has to be kept oiled as it is not stainless steel but high-carbon steel and as another poster said had happened to their's is now more like a filleting knife it has been sharpened so often.

One thing that does help a good knife last longer is never to put them in the dishwasher especially if they are not made of stainless steel.

A new year resolution is to get back into cooking and I'm going to treat myself to a new set of knives. Henckels, being Deutsch and also being endorsed by The Merry Prankster, seem the oh-so obvious choice. Can I ask, which range do you use?

Sorry for there delay. The Henckels are the Professional S range (I also have a couple from the Twin range). My boning knife is a Westhuf.

I have a professional range knife, don't know which as faded a bit now. Have had it for at least 15 years, never needed to sharpen it.

Thirty years ago (bloody hell!) I trained as a fish filleter and always used Sabatier, excellent knives. In fact, I am sure I still have some in my wife's knife box (she used to be a chef) and Sabatier is what she used. I have just bought a Sabatier set, 5 knives, 1 steel and 6 steak knives for £40 and they are excellent. My old set were nothing special so it is a joy to use these new ones.
