I'm not sure quite how to describe it, I just know that I felt an urge to run to the loo like a Bat Out Of Hell the only time I ever ate it.

Mince, Onion, Breadcrumbs, Egg (and I believe traditionally a dash of Ketchup) mashed up and cooked on a bread tin and let to go cold.

Actually not as bad as it sounds, a sort of rough and ready terrine.

Corned beed is something entirely different, essentially beef submerged in
brine for ages and cooked.

( The brine changes the texture of the meat making it very tender )

I've led to believe that REAL corned beef, i.e. that which you make yourself is something quite special and quite different to the tinned stuff.

( Although tinned corned beef is similiar to meat loaf )

Absolutely agree, fond childhood memories of my mums meatloaf. Long time since I've had some - that'll be something for this weekend then.

Why is "Corned Beef" so called?

Old-time butcher shops closed every weekend. Ice, the only refrigerant available, could not dependably hold fresh meat for two days. To keep unsold meat from going to waste, the butcher soaked the meat in a strong brine or covered it with coarse salt to trigger osmosis. The grains of salt were called "corn" in England, and the name "corned beef" stuck with the product.

Corning is a form of curing; it has nothing to do with corn. The name comes from Anglo-Saxon times before refrigeration. In those days, the meat was dry-cured in coarse "corns" of salt. Pellets of salt, some the size of kernels of corn, were rubbed into the beef to keep it from spoiling and to preserve it.

As long as there was a tiny bit of ketchup on the top while it was cooking it is fine, without it tastes icky!

Meatloaf is lovely. It's basically a Polish dish, I believe.
