Reasons to say "no".......

Not the best header of the ball.....it has a habit of skidding off him in random uncontrolled directions.
Positionally naive.
Shares Lewis Dunk's habit of losing concentration/focus at times.

To be fair, playing in midfield is a whole lot different to playing at the back with the ball always coming towards you.

The best performance that I saw last year - the 3-1 home win against Leicester - had Ince and Bridcutt operating together in midfield. They took it in turns to get forward; it was brilliant to watch.

Have Toko as the destroyer and let Ince majestically gallop up and down the pitch

Simple.
That's not really how Ince plays though, is it.

Bambi on ice the moment the ball arrives in his possession.
Supremely composed after a couple of touches.
Able to majestically gallop up field until he crosses an imaginary line.
Then he becomes Thumper in the headlights.

Defensive Midfielder

I think this is a very important position, more so when the shape is essentially 4-3-3.

Not only a destroyer, the best defensive midfielders are playmakers as well.

But it is not a difficult as all that because the defensive midfielder has most of the play in front of him. If a defender goes forward the player in this position has to slot into the back four as well.
