Any ideas. Using either Beef or Chicken as your 'meat' then the usual vegetables sprouts,carrotts,parsnips,stuffing,small sausage&bacon wraps,maybe small steamed onions roasties or maybe a few boiled pototoes,yorkshire,s and of course gravy. However does anyone have any little bits/ideas of what you can add ? :thumbsup:

boil the spuds for 5/10 minutes and shake them to fluff them up before roasting them. Then the spuds will be crispy on the outside :thumbsup:

My Mum used to make suet pudding,and put it in the roasting pan with the roast lamb, to roast in the meat juices. mmmmm lovely.
It did the same job as Yorkshire puddings with beef, pad out the meal.

Using Jamie's recipe....smother your carrots in honey and roast them ( ooooeeerrrrmissis)

Also, M&S mashed carrot and swede is to die for.......M&S minted and buttered peas!!

His version of gravy, using mashed up vegetables , roasted and drained, then add the juice of the meat and some stock....voila

Suet Flour and water mixed together and then put into a dish with hot fat as per yorkshire puddings. Instead of batter you use suet and flour.

Nice to find someone else that knows and appreciates it. Having asked around in different parts of the country, most people tend to turn their noses up at the idea.
Do you think it's old Sussex?

When you roast your spuds, par boil them for 10 mins, bash them on the side of the pan, put them into hot oil with finely chopped garlic and either rosemary and/or thyme.

Boil swede, mash with lots of butter, salt, pepper and a bit of nutmeg.

If roasting chicken or turkey, mix some softened butter with some chopped lemon thyme, lemon zest and some lemon juice. Push the butter mix under the chicken skin and let it melt whilst cooking.
