I think thats rhino skin, TD. Hippo's skin is quite soft and will get sunburnt if they don't stay in water all day. Will make lovely crackling!

I reckon hippo crackling is what African TRIBE LEADERS probably gorged themselves on, in the same way that the Royals in the 16th century used to eat swan, partridge, duck and pigeon in the same pie.
