My tip for crackling (from some cook book or other) take the met out of the fridge several hours before you plan to cook it, uncover it, dry off any moisture then leave it till you're ready for it. I tend to sit it on a plate with one of those net mini umbrella type things over it. The trick is to get the skin as dry as possible before cooking it. Seems to work well for me.

Mm, not what I was getting at, there is some sort of food that they eat, that is deadly poisonous to other mammals, I wondered if this poison remains in the flesh of the Hippo, like high levels of toxins that can stay in some types of fish for example, . As for pigswill (rather old fashoined) there isn't anything put in that food that is knowingly poisonous to us.

Then put it in your pre heated oven already set to Gas Mark Nuclear.
Give it 20 mins then turn it down to a regular cooking speed.

I reckon hippo crackling is what African TRIBE LEADERS probably gorged themselves on, in the same way that the Royals in the 16th century used to eat swan, partridge, duck and pigeon in the same pie.

I think thats rhino skin, TD. Hippo's skin is quite soft and will get sunburnt if they don't stay in water all day. Will make lovely crackling!
