Veggi chilli - base sauce of tinned toms and passata, chilli to taste. Add onion and mushroom, then load with tinned pulses (eg red and or white kidney beans, chic peas, butter beans etc). Serve with rice. GT

Anyone got any good recipies, feeling a bit of a CHUNK as I have not done any exercise for 3 weeks, and eaten LOADS over the winterval period.

Salads are a bit boring, so there must be some healthy type recipies on the NSC menus around the globe???

Pick up a copy of Jamie's Ministry Of Food.. lots of smashing and easy recipes....just cook some healthy stuff up and don't over eat and get off yer arse and get running and you'll be fine

-Use quorn sausages.
-Use fry-light or some similar low fat spray to grease the frying pan to fry the egg (may have to turn the egg over if you don't like it gooey on top, since there's no oil to flick over it)
-cut a potato into thick chips, par boil them, chuff them up, then roast in the oven with a couple of sprays of fry-light.
-Add baked beans.

Prawns and Rice

Cooks long grain rice as instructed - enough for two portions. In the meantime melt a small knob of butter in a wok or wide pan and add a small can of kidney beans (drained and rinsed), a small can of whole mushrooms (drained), a small can of sweetcorn (drained) and a big handful of frozen peas and half a bag of frozen prawns (not the micro ones and not the giant ones - just your bog standard frozen prawns). Warm through - but on a low heat since everything is already cooked, you're just warming them up. Add the cooked rice. Season with salt and pepper (and a squeeze of lemon juice if you like). Serve.

Amazingly tasty and one you can make from stuff most people have knocking around at the back of a cupboard.

Variation - this is a gentle and mild comfort food recipe, but if you want to stir fry it more quickly over a hotter heat with some fresh chilli, ginger and garlic and maybe fish sauce, it adapts easily. Brown rice can be used, but makes for a heavier and less comforting meal. Use fresh prawns if you like - but you need prawn in every forkful so those frozen ones do the job here. Look for deals on frozen prawns and stash a couple of bags in your freezer for use should the need arise.

This is the parasite involved in amoebic dysentery. Have some and see the weight fall off. :thumbsup:

Salmon cook in foil with a slice of lemon on top. About 250kcal.

The sort of rice you use for Paella.

The secret is to soak the rice in boiling water from the Kettle for about an hour, then drain and rinse it thoroughly.

This does two things - firstly gets rid of excess starch and also makes the rice cook very quickly with less water. The second point is important because it means everything can be thrown into together without everything else over cooking, although meat you would probably cook and add in, in the end.

Adding a tablespoon of salt in the soaking stage (remember to thoroughly rinse) also takes the starch away.

So you can use a little oil and fry some onions, finely chopped carrots, pepper, frozen - whatever really. Some chopped bacon at this point if you want. Chopped small is the key really, you are wanting the vegetables to flavour the rice. Rather than just sit there is a pile of tasteless starch.

Throw the rice in, with half a chicken stock cube and a bay leaf.

Cover with water, slightly more twice than the depth of rice. Bring to the boil, put the lid and TURN THE HEAT DOWN TO THE LOWEST POSSIBLE.

Check after about 10 mins. Soaking the rice in boiling salted water really does improve it, cut it will cook a lot quicker than usual.

Very tasty. Half a teaspoon of butter at the end, makes all the difference though.

I believe that Salads should be eaten as a snack between proper meals as they never fill me up. Wife and I argue about this every summer as I think that is when you should eat them not during the winter when you need protection from the colds and flu etc.

Healthy eating to me in the winter is 2 or 3 large jacket potatoes with either chilli or blue cheese and bacon.
