Healthy Meals That Aren't BORING

Anyone got any good recipies, feeling a bit of a CHUNK as I have not done any exercise for 3 weeks, and eaten LOADS over the winterval period.

Salads are a bit boring, so there must be some healthy type recipies on the NSC menus around the globe???

I don't know how a chef such as your self can call salads boring, as they can encompass virtually anything! I did a fantastic one the other day with : cos lettuce, peppers, spring onions, cucumber, boiled eggs, fresh marinated anchovies, potatoes and croutons and believe me it was yum. Also did an excellent vegetable casserole (carrots, parsnips, swede, potatoes, mushrooms), with cheese dumplings...

I did a fantastic one the other day with : cos lettuce, peppers, spring onions, cucumber, boiled eggs, fresh marinated anchovies, potatoes and croutons and believe me it was yum. Also did an excellent vegetable casserole (carrots, parsnips, swede, potatoes, mushrooms), with cheese dumplings...

add some avacado and fried chorizo to that salad:thumbsup:

I am eating 70% chocolate in my office - 2 squares tend to get rid of my choc cravings for the rest of the morning!

Healthy meals; have you tried getting all the Veg you have, cooking it, then chucking a tin of Oxtail soup over the top and stirring through until the oxtail soup is hot? That was my favourite student dish and isn't too unhealthy - although I did tend to serve it with sausages in as well as veg.

1) ham omelette (with a liberal sprinkling of cheese) with an INTERESTING salad on the side (rocket leaves, yellow pepper, salad onion, cucumber, olives, grated carrot), drisled in balsamic vinegar.

2) Home made soup. We made home made parsnip soup and broccolli & stilton with our xmas leftovers - both are among the best soups I've actually tasted!

So so easy too - parsnip soup:
sweat some onions, add half a clove of garlic
boil a kettle, make some veg stock using any left over turning veggies and add to a veggie stock cube
add the onions and a mound of parsnips to a big pan, then pour in the stock
boil the lot.
blend it thoroughly
add cream and pepper to taste.

serve with a slice of crusty bread and an apple. :)

Agree totally. Never understand that mindset. If I had to eat just one type of meals for the rest of my life I would choose salads everytime.

Salads are nice, but they are boring as they are the only real thing perceived as healthy

I do like salads, but there must be something just as healthy that isnt salad.

And it is ruddy FREEZING outside, so eating cold food isnt what is needed right now!

I love kedgeree! But it isn't that healthy unless you use brown rice and don't use cream to blend.

My suggestions would be;

Diet chips - get yourself a can of frylite oil, cut up potatoes into chip shapes, boil and bash then dry off with kitchen towel. Spray with frylite and bake in oven. Yummy virtually fat free crunchy chips

To replace crisps - break up dried lasagne sheets, arrange on baking tray and spray with frylite and season with dried spices (ie cajun spice) cook at 200 degrees for about 7 minutes. Fat free crisps! Sounds a bit iffy but they really are yummy

Roasted veg couscous - in oven, roast peppers, onion, garlic, mushrooms plus any other veg you like. Cook couscous and mix together. Serve with a chicken breast (skin removed) or any other kind of meat with the fat cut off

Mediterranean stuff - pasta without massive creamy sauces, fish, lean white meat - all that stuff is good for you. Get some nice tomatoes, bit of olive oil and maybe some couscous or something and you're sorted.
