Hash browns are like grey squirrels, a non-native species. Probably a blob of lard too far in a Full English. Tho having tasted them, you can't then untaste them, and feel weirdly cheated if they're missing from the plate

Herts
Maris Piper potatoes
Peel, and boil for 3 mins
Shred on coarse cheese grater
Squeeze excess water out
Add 2-3 finely chopped cornichons
Form one large patty covering entirety of pan
Shallow fry in clarified butter on a medium heat for 5 mins/side
Drain excess fat
Whack up to as high as possible, and fry for 90 seconds per side

My favourite recipe for hash browns is 1). remove all packaging, 2). place in food recycling bin, and 3). look for something (practically anything!) else to eat.

The triangular lardy shit dished up in this country ( typically) is pretty piss poor.

I had ham and eggs with hash browns in St Louis for breakfast once, utterly superb. A totally different beast.

This. US styleee hash browns are much better and don't resemble the bricks that could hold up wonky table legs you get in the UK. And then there are 'tater tots" a sort of mini hash brown and can be weirdly tasty.
