Dario Gradi is the right answer. His management career has been nothing short of phenonmenal. In his way, as great a manager as Ferguson or Wenger. (He even had the good taste and judgement to be a disaster at Palarse).

don't get me wrong , as a person and player i f***ing hated him - but theres just something about his reign as a gaffer so far that has to be respected.

ngredients
500g/1lb 2oz shallots, peeled
3 tbsp black peppercorns
flaked sea salt
1kg/2¼lb fillet of beef
olive oil
small bunch of thyme leaves
1 tbsp demerara sugar
roast potatoes and buttered spinach, to serve
For the sauce:
4 tbsp brandy
250ml/8fl oz beef stock
150ml/5fl oz double cream
Worcestershire sauce

Method
1. Preheat the oven to 200C/400F/Gas 6
2. Place the shallots in a pan of boiling water and blanch for a couple of minutes. Drain and put to one side.
3. Coarsely crush the peppercorns in a pestle and mortar or mini-blender. Put on a plate with 1 tbsp salt and roll the beef fillet over the mixture, pressing firmly so it sticks to the flesh.
4. Heat 2 tbsp oil in a roasting tray and when its very hot, quickly fry the fillet until it's browned all over. Remove from the heat and scatter the blanched shallots and thyme around the fillet. Sprinkle the shallots with the sugar and a little oil. Place in the oven for 20-25 minutes for rare beef, 40 minutes for medium, or 50 minutes for well-done. Halfway through the cooking time, turn the shallots in the tray. Once they are cooked, remove the beef and shallots from the tray, taking out any thyme stalks, and keep warm to rest.
5. For the sauce, place roasting tin over a high heat, add the brandy and set alight. When the flames have died down, stir in the beef stock and boil for 3 minutes. Stir in the cream and a dash of Worcestershire sauce and season with salt and pepper. Bring to a simmer and cook for a couple of minutes until the sauce has thickened slightly. It is now ready to serve with the rested fillet of beef, sweet roasted shallots, and perhaps some roast potatoes and buttered spinach.

reminds me of that French manager, Guy Roux who has been at one club for over 40 years. Took them from non-league amateur to European footie. Now that's phenomenal.:bowdown:

I know where your coming from i just wonder when things start to go wrong for him how will he cope then, it may not be to long to see how he can handles it!!

did exactly what adams did for us, but didnt walk out halfway through. would always come into the executive lounge after the game, win loose or draw, shake hands and talk to people for a good half hour at a time. add in the fact he is a bloody good manager as well

He would've walked if he'd had the opportunity.

Didn't he once get conned into thinking he was going to get the Ipswich job and he did all his goodbyes before it was revealed as a wind up?

Mark Hughes is really not my cup of tea.

I've always been a big fan of Alan Pardew (yes, even during our title race). Very honest and comes across as a very nice bloke. I also like Peter Taylor a lot, seems like a nice bloke who really knows what he's talking about.

hehe how worng you can you be, Pardew is a C*NT of the highest order let me tell you.

I've heard Pardew rather loves himself.

I've heard he loves a lot of people.

And if his lawyers are reading...................I of course mean in a roister doister man love kind of way with back slapping and punching of shoulders rather than the moist and slippy kind of love with lots of people who aren't his wife kind of way which I'm sure a person fo his standing would NEVER get involved in
